Viognier was hand-harvested and destemmed into tank to undergo a 12 hour cold maceration. After 12 hours, the grapes were pressed and the juice cold settled and then fermented at low temperature in stainless steel tanks.After fermentation was nearly complete,one-third was put into 1 and 2 year old French oak barrels. After six months of aging on lees the result is a wine that is aromatic and full bodied.
Clean and bright aromas offer hints of fresh-cut Gala apple, Rainier cherry, quince paste, orange zest and sweet herbs. Bracing acidity arrives early and stays late, bring succulent flavors of Asian pear, Granny Smith apple, lime zest, river rock and lemon peel. It's an ideal wine for crab and/or scallops.
2013 Matchbook The Arsonist Dunnigan Hills Chardonnay 750 mL Wine

Chardonnay clone 4 and clone 95 (Dijon) were picked at night and delivered to the winery before sunrise to ensure that fresh, cool grapes were crushed. The lots were barrel fermented and the lees were stirred frequently. Yeast cocktails (a mixture of the winemakers favorite compatible yeasts) were used on all the lots to ensure complex fermentation characters would evolve in the wine. We selected 10% of the finest barrel lots and let them age another six months while maintaining our weekly stirring program. 50% of those lots were selected for The Arsonist Chardonnay.

From the Yakima Valley, this 2011 un-oaked Chardonnay benefited from a long hang time imparting great aromatics while keeping the structure intact. Light, golden straw in color, the nose offers honeydew melon, honeysuckle and lime. On the palate there are hints of sweetness, beautifully bright & crisp, the melon evolves into a long, lingering citrus finish. One of our best wines ever. Enjoy this wine while hiking, sailing or on your deck while the BBQ is warming up.

Temecula Valley, located in the Southern California wine country, had a great 2012 grape harvest. The year began with a cool spring and early summer, which gave the grapes quality time to develop. While this resulted in a longer growing season for the grapes, the high heat in mid-August and early September led to a quick-paced harvesting across the valley. Overall, yields were slightly higher than forecasts-5-8 percent higher in some areas. Grape quality was really nice- fantastic color and strong flavor concentration providing a balanced juice.

The second consecutively warm vintage in a row for Washington, 2014 had record-breaking heat in many parts of the Columbia Valley AVA. These increased temperatures led to an early harvest by about two weeks across the valley.
