With more than 30 years of winemaking experience, Wild Blossom Meadery & Winery is the first winery in Chicago and the only producer of mead on the Northern Illinois Wine Trail. Being a mead producer, at Wild Blossom Meadery & Winery we raise our own bees and collect our own honey. For each bottle of mead we produce, our bees pollinate some 2 million flowers. Those, in turn, produce 20 to 40 million seeds destined to become new flowers. The positive impact plants have on the environment is well known. Meanwhile at our location on Chicago's lakefront, we purify and use water from Lake Michigan to produce our wines. On a whim, we blended honey wine with peach - magic happened. Turns out we created an exceptionally mellow mead wine, with an easy-to-enjoy, forward fruit taste. But perhaps it's not surprising, since we use pure, rich, Montana honey wine and sweet delicate peach juice. This unique Northern Rockies honey wine speaks with a subtle Southern drawl.
A wild cherry that grows prolifically throughout Montana, the Chokecherry got its name because it doesn't sweeten until after a frost. Montanans have used it for years to make their favorite syrup and jelly. This tradition, inspired our winemaker to marry this familiar flavor with local honey, and create a true Montana wine and the winner of our first gold medal. Serve slightly chilled.
Berry sweet with a nice acidity Blackberry Honeywine has an exquisite flavor. Blackberry Honeywine is Kosher without sulfites or preservatives added! Since we use no sulfites in producing our wine, we do not agitate our wine to remove co2 produced in fermentation and chilling, giving the wine a slight spritz. Great served paired or over ice before or after dinner.
